Christmas Chocolate Cookies

'Tis is the season to bake like there's no tomorrow!
Christmas time is perfect to get more creative with your bakery creations and indulge ourselves with some tasty sweets and desserts. Italian panettones, chocolate roulades, decorated cookies, rich poundcakes...and the list goes on! :-)
Today I'm bringing you a slightly customized recipe I took from Martha Stewart's original Chocolate Cookie Cutouts recipe.
Cookies aren't my specialty (still have to control the baking time a bit more) but I must say these ones were pretty easy to make and they came out tasty and sweet.

Ingredients
1 1/2 cups all-purpose flour.
1/2 cup plus 2 tablespoons cocoa powder.
1/8 teaspoon salt.
1/4 teaspoon ground cinnamon.
3/4 cup (1 1/2 sticks) unsalted butter, room temperature.
1 1/2 cups sifted confectioners' sugar.
1 large egg, lightly beaten.
1/2 teaspoon pure vanilla extract.


Directions
Sift flour, cocoa powder, salt and cinnamon into a bowl.
Beat well butter and confectioner's sugar until pale and fluffy; add in vanilla extract. 
Mix in the egg gradually to prevent curdling. Without stopping, pour in the flour with a spoon.
Divide dough in two equal parts and roll it out between two baking sheets; refrigerate at least 2 hours.
Preheat oven to 175ºC (350F).
When the dough is firm cut out cookies in different forms (stars, christmas trees, bells, etc) and freeze until very firm, around 15 minutes.
Bake cookies until crisp, 10 minutes approx. Let cool on sheets on wire racks.
Pour over confectioner's sugar to decorate.

Enjoy them in Christmas Morning with some milk or a good cappuccino.
